Another Sunday, another trip to the vet with Rusty. He's still super skinny and the $300 blood test didn't show any abnormal results. I'm super grateful that he's with a rescue that will spend the money on him to find out what's wrong, but I'm also really frustrated that they are spending all this money and we can't resolve his issue.
He's still super sweet and very energetic. I just wish we could get some weight on him.
My other project for the day was cooking pork and potato stew with green chili sauce. This was a fun one for me - we used our Walden Farm pork, I tried a new recipe (Actually, three, all contributing to the final product.), and we had a delicious Whole30 friendly dinner. I roasted poblano peppers for the first time ever, and that worked out really, really well. I was convinced that I was going to set myself on fire (not an unusual occurrence in my kitchen), but I didn't. Here's the final product:
I'm not really a pork fan, but I have been enjoying finding new recipes for the pork we are getting from our monthly meat delivery. Right now, we have a whole chicken (Actually, we have two whole chickens. One is from another farm.) - what do you all recommend for ways to cook a whole chicken????
